1. Cucumber (Kheera) Raita

Material :
  • 2 small cucumbers
  • 1/4 gram Curd
  • 1 small green chili or a pinch of red chili powder
  • 1 tsp powdered sugar
  • Salt (as per taste)
  • Mustard seeds (for seasoning)
  • Some finely chopped coriander
Method :-
  • To make cucumber raita, first grate the cucumber and squeeze out all the excess water from the cucumber. Keep it aside.
  • Now beat the curd well with the help of a whisk.
  • Add green chilli paste. It adds a nice flavor to the raita. You can use red chilli powder as an alternative.
  • Now add cumin powder. This will help in adding aroma to the raita.
  • After this add powdered sugar.
  • Now add salt and mix well.
  • Now add the grated cucumber and mix well. Let it sit in the refrigerator for at least 30 minutes.
  • Once cooled, before serving, heat oil in a small non-stick pan. Add cumin and mustard seeds to it.

  • Gram flour - 1/4 kg
  • Green chilli - 2-3
  • Onion - 2
  • Red chilli – 1 tsp
  • Turmeric – half teaspoon

  • Celery - 1/2 tsp
  • Garam masala - 1/4 tsp
  • Oil – 1/4 ltr.
Method:-
  • First of all, peel the cucumber and cut it into round slices.
  • Now cut green chilli and onion into fine pieces.
  • After this, filter the gram flour and take it in a big bowl.
  • Now add all the dry spices to this gram flour and mix it well.
  • Now add water little by little to the gram flour and make its batter.
  • Now add finely chopped green chillies and finely chopped onion into the gram flour solution and mix.
  • Now put oil in the pan on medium flame.
  • Add one teaspoon lukewarm oil and mix well. (Adding oil to the batter makes the batter less sticky to hands)
  • Now dip each cucumber slice in the batter and deep fry it in oil until it turns golden.
  • Take them out and serve them hot with sauce.
