6 Rajasthani Dishes To Try This Winter

When the weather gets cold outside there's nothing better than some winter comfort food. In Rajasthan, when the weather is pleasant, people can also look forward to wonderful winter delicacies. As soon as the winter season comes, food establishments and people in Rajasthan make these delicacies and eat them and serve them. Winter-specific dishes generally cannot be found during other seasons. The aim of this blog is to highlight the best food to eat in Rajasthan, which can be eaten during winters when it is cold and monotonous.

1. Gajar Ka Halwa:

In the Indian subcontinent and specifically in Rajasthan, gajar ka halwa is a carrot-based sweet pudding known as gajarella, gajar pak, and gajar halwa. To make it, you need to cook grated carrots with milk and sugar, stirring frequently, and a certain amount of cardamom in a pot. Almonds and pistachios are frequently garnished with it. Ghee, a type of clarified butter, is used to roast nuts and other uses. During the winter, it is served hot.

Gajar Ka Halwa

Ingredients required for Gakjar Ka Halwa:

Gajar Ka Halwa - 1 Kg Carrot, 1 1/2 liter milk, 6-8 Green Cardamoms, 5-8 tbsp ghee, 5-8 tbsp sugar, 2-3 tbsp raisins, 1-2 tbsp almonds

Recipe for Gajar Ka Halwa:

  • Carrots should first be washed and then peeled and grated.
  • Heat the grated carrots and cardamom in milk until the liquid evaporates.
  • Add ghee to a heavy-bottomed pan and heat it up. Add carrot mixture.
  • Gently cook for 10 minutes.
  • After adding sugar, stir until the halwa begins to turn a deep reddish color.
  • Sprinkle dried fruit on top and serve.

2. Rajasthani Gond Ke Laddu:

In winter, this sweet is often eaten in homes. To keep the body warm, Rajasthani also adds gond laddoos to different types of sweets which taste very tasty and are very easy to make. This is a favorite and traditional sweet in Rajasthani households to escape the chilly weather.

Gond Ke Laddu

Ingredients for making Rajasthani Gond Ke Laddu Sweets: - Wheat Flour - 500 grams; powdered sugar / jaggery - 500 g; Ghee - 400 g; glue - 30 g; Makhane - 50 grams (optional); cardamom - 1 tsp; Raisins, almonds and cashews - 5-6 tsp

Recipe Method to Prepare Rajasthani Gond ke Laddu: -

  • First of all, take a pan and add ghee to it and heat it, and fry the gum well, as soon as the gum starts to swell, take them out of the pan and keep them on a separate plate.
  • Now add wheat flour to the remaining ghee and fry it well, when it becomes light brown, the smell of cooking will come and the ghee will start separating, now turn off the gas.
  • Now add roasted gum and stir it well and add all the rest of the ingredients and mix well and let the mixer cool down a bit.
  • When this mixer becomes slightly hot, make small laddus out of it.
  • Now, this dish is ready to be served.

3. Haldi Ki Sabji:

Turmeric is used to make Haldi Ki Sabzi. Curd is added to the dish to temper the strong flavor of fresh turmeric. In the extreme cold temperatures of Winter, this dish is very popular because it provides so much heat for your body, making it a portion of great comfort food.

Turmeric has wonderful antiseptic properties and is used in Ayurveda medicine. It is a great addition to winter fare because of its antiseptic properties. The majority of Rajasthani families make this in a little larger quantity and store it in the refrigerator to serve as a side dish.

Haldi Ki Sabji

Ingredients required for Haldi Ki Sabji:

200-250 Gms Fresh Turmeric Root, 1-1.5 Cup Peas, 1Cups Dahi, Ghee, Red Chilli Powder, Coriander Powder, 2-3 Green Chillies, Onion, Cauliflower (Optional), Salt as per Taste

Recipe For Haldi Ki Sabji:

  • In a pan, over medium heat, heat the ghee. Add slit green chilies and Onion. Stir-fry till the Onion starts to change color.
  • Add the grated turmeric. Stir-fry till the turmeric starts to change color and the raw turmeric smell starts to disappear. Be sure to keep stirring as the turmeric has a tendency to stick to the pan.
  • Add the peas and Cauliflower. Continue to stir-fry till the peas soften a bit.
  • Add the red chili and coriander powder. Mix well. Turn the heat down to low.
  • Add the salt and Dahi and Mix well. Heat for 5-6 minutes turns off the heat.
  • Cover and set aside for 10 minutes. Serve warm with Rotis.

4. Bajre Ki Raab:

A soup made from bajra flour known as Bajre Ki Raab is served in Rajasthan. It is recommended to pregnant women for its ability to enhance immunity, cure loss of appetite, provide energy, and cure morning sickness. There's nothing quite like a warm raab to soothe a sore throat. During the winter months, bajra or pearl millet flour is commonly used due to its healing and nourishing properties in Rajasthan.

Bajre Ki Raab

Ingredients required for Bajre Ki Raab:

1/2 - 1 cup Bajra Flour (Pearl Millet), 3- 4 cup Buttermilk (Dahi Can Also be used), Cumin seeds (Jeera) for garnishing, Salt to taste.

Recipe for Bajre Ki Raab:

  • Making Rajasthani Bajre Ki Raabdi Recipe begins with mixing buttermilk with bajra flour, and then adding salt. Make sure the mixture is smooth and free of lumps.
  • Put a lid on it and let it sit for 1-2 hours (Traditionally, it is fermented in an earthen pot under the sun).
  • Add it to a saucepan and cook it slowly over a low flame, stirring continuously, for about 25-30 minutes. You will notice that it thickens as it cooks.
  • The consistency should be semi-liquid/pourable when it's done cooking.
  • Place in glass, then garnish with cumin seeds. Cooling will thicken Raab/Raabdi further.

5. Rajasthani Moong Dal Halwa:

The rich and creamy Moong Dal Halwa is a traditional winter dish in the state of Rajasthan and has a reputation for keeping the body warm on cold days. Traditionally, the moong dal halwa served in Rajasthan is the most auspicious dessert for Holi and Diwali. It is eaten with great enthusiasm by many.

Moong Dal Ka Halwa

Ingredients for making Rajasthani Moong Dal Halwa Sweet: -

Moong dal without peeling - 1 to 1.5 cups; sugar - 1 cup; saffron; gram flour - 1 tsp; semolina - 1 tsp; chopped dried fruits; Ghee - 1-1.5 cups; Cardamom powder - 1/4 tsp

Method to make Rajasthani Moong Dal Halwa Sweet: -

  • First, take moong dal and soak it in water for about 5 hours, and then grind it well in a mixer.
  • Now take a pan and heat ghee in it and add gram flour and semolina and cook it well till it becomes golden brown, now add moong paste to it.
  • Also, make sugar syrup with the help of sugar and water.
  • When the pudding becomes golden brown, then add sugar syrup to it and mix it well.
  • When all the water is removed, take the halwa down from the gas and add dry fruits to it.

6. Gajak:

Gajak

Ingredients Required for Gajak:

1- 1/2 cup roasted sesame seeds, 200-300 gm sugar, 2-3 tablespoon water, 1/4 cup halved cashews, 2-3 tablespoon ghee

Recipe For Gajak:

  • Prepare a tray by greasing it with ghee.
  • Sesame seeds should now be roasted evenly on a low flame until they turn a light brown color.
  • In the same way, roast cashew nuts until golden brown.
  • Use any remaining ghee. Put sugar and two tablespoons of water in it. Continue stirring until the mixture thickens.
  • Let the syrup cool. Once the syrup is cool, add the cashew nuts and sesame seeds.
  • Sprinkle even amounts of the mixture over the buttered dish.
  • Cut it to the size and shape you desire. Let it cool.
  • Cut it into pieces once it has cooled. You are ready to serve the gajak.
